The term "True Relationship Coffee" was first coined to describe the relationship Danes Gourmet Coffee has with the entire chain from the green bean grower/farmer, the roaster, the café owner, the barista and the customer. It is also a description of how we do business which includes our customers, suppliers and networking partners. It encompasses all of Danes Gourmet Coffee relationships in general!
Starting from the source, Danes Gourmet Coffee roasts and sources its fairly traded beans termed 'True Relationship Coffees' ensuring coffee farmers receive a fair price. This empowers and connects farmers and consumers to produce an ethical, sustainable, specialty coffee. Our coffee is of the highest quality and infuses mind, body and soul with the conscious knowledge that your love of coffee can have a balanced relationship with our environment.
"True Relationship Coffee" encompasses the chain as described below;
The Raw Product
- The beans that we source are of special quality and available to a very limited market. Only a small percentage of coffee from a plantation will be classed as special, and in securing this special product, a price that reflects this quality must be paid.
- To ensure the price represents the quality, a specialty coffee roaster must understand what quality is. This role is given to a 'cupper' who is someone that tastes the coffee for a vast range of defects including damage caused by insects, poor treatment in transport, age, mould, uneven moisture content and bean density, the list goes on. A cupper will also taste for roasting faults and ensure the blends of coffee are consistent from week to week. When an inconsistency appears, appropriate measures will be taken before the product reaches the consumer.
The Cupper/Roaster
- The Cupper and the Roaster work very closely together creating and developing a flavour profile of our blends. A coffee blend is a mixture of single origin coffees that have been roasted at a particular temperature for a certain amount of time. A change to any one of their elements will change the flavour of the bean.
- The blend is then packaged appropriately and sold to a café where it is the Barista's job to personally craft a flavour.
The Barista
- A professional Barista should be able to create the full potential of flavours from their blend of coffee. To do so requires a vast amount of knowledge of the product and the process. A barista should have the ability to indentify flavours, have an understanding of the workings of a commercial espresso machine and coffee grinder, have efficient friendly customer service, and be able to produce the product consistently. This takes a great amount of time, dedication and personal desire.
The Consumer
- As a consumer whenever we see a brand of coffee we may relate it to an experience, a flavour, or even remember that a friend recommended it. Initial purchase will be decided on the brand and its perception in the marketplace.
- If the barista is not able to craft a consistent, flavoursome product, then the perception of the brands quality will be tainted. It is imperative the Barista is very well educated in the philosophy of the brand, so as to educate the consumer on what it is and why exactly they are purchasing the product.
