Well-trained staff are integral to a successful specialty coffee business. With this in mind, Danes Specialty Coffee Institute (DSCI) has created the ultimate specialty coffee training facility. Using only the most current, best-practice methods in the industry, DSCI built a reputation as an outstanding centre for specialty coffee knowledge.

Located in Brookvale on Sydney’s Northern Beaches, the facility offers the most comprehensive specialty coffee training program for baristas in Australia. Danes is the only Australian licensed training partner of the Specialty Coffee Association of America (SCAA). This enables DSCI to deliver the SCAA International Professional Development Program (IDP).

Here are nine hot food trends that Sydneysiders love.

NITRO COFFEE

Danes’ nitro coffee takes cold-drip coffee to the next level. This uber-trendy drink is essentially coffee in a keg that’s served and poured like a draught beer.

Its Four Elements espresso blend beans are soaked in cold water, filtered and bottled as a concentrated liquid that can be served straight, mixed with water or over ice.

Tap-poured coffee uses 75 per cent nitrogen and 25 per cent CO2 to get the bubbles.

Think of it as a well-known Irish stout, managing director Paul Jackson said

BeanScene magazine - Meg Loudon of Coffee Brothers wins 2016 International Grand Latte Art Championship

Meg Loudon from Coffee Brothers in Mona Vale, New South Wales is the 2016 International Grand Latte Art Champion.

Hosted by Danes Specialty Coffee, Meg took out the top spot on Friday 19 August in front of a packed house at Chatswood‘s Victoria Bar and Grill.

Zhao Ting Wu of Cote Terra was runner up and Andy Wong of Harvest Blend placed third, both from Victoria.

Manly Daily - Mona Vale barista scoops top prize at international latte art contest

BARISTA Meg Loudon is on a caffeine high after winning the International Grand Latte Art Competition.

Meg, 22, from Coffee Brothers in Mona Vale, beat 53 other competitors to claim a cheque for $3500 at the second annual contest hosted in Chatswood by Danes Specialty Coffee.

“I was shocked,” said Ms Loudon, from Duffys Forest. “I wasn’t expecting to get through so many rounds.”

The first three rounds saw competitors recreate images from a photo on screen. In the final heat, they replicated each others’ art. Each creation was then scored to determine the winner.

Due to overwhelming demand – and an attractive prize pool – Danes Specialty Coffee has increased the number of entry positions available for the 2016 International Grand Latte Art Championship (IGLAC) on 19 August. 

Danes Specialty Coffee says registration for the second annual competition filled up quicker than expected. As such, event organisers have increased the format to accommodate 54 baristas.

Danes Specialty Coffee will host the second annual International Grand Latte Art Championship (IGLAC) on Friday 19 August in Sydney.

The event, taking place at Chatswood‘s Victoria Bar & Grill from 5pm – 9pm, will see the region’s top baristas showcasing their artistic flair and competing for the title of top latte artist.

“Australian baristas are a truly talented and creative group. Latte art celebrates the creative side of the industry, as well as the fact that milk-based coffees continue to be a popular choice amongst specialty coffee drinkers,” said Paul Jackson, Danes Specialty Coffee Managing Director.

Manly Daily - Danes has introduced a cold-brew nitro coffee

WHEN is a beer not a beer? When it is a long, cold coffee. Danes Specialty Coffee at Brookvale has introduced cold-brew nitro coffee to its expanding range.

The uber-trendy drink is essentially coffee in a keg, served and poured like a draft beer.

“We were looking to do something different,” managing director Paul Jackson said. “So we have developed a line of cold-brew coffee which is then pressurised and poured from a tap.”

Brookvale coffee roaster Danes picked four silver and three bronze medals at the 2016 Australian International Coffee Awards in Melbourne last month. Managing director Paul Jackson puts the swag of awards down to teamwork, sourcing and roasting the beans and training. The AICA is in its fourth year and is Asia Pacific’s premier coffee roasting competition.

“Cold brew is an excellent way to brew coffee,” said Paul Jackson, Managing Director of Danes.

“It has a clean, bright flavour, and is refreshing and convenient. It’s no surprise that at the moment there is a cold brew revolution happening,” he said.

MAKING a decent coffee is a skill. Some of Sydney’s best home baristas will battle it out for top honours in a coffee-making competition.

The Home Barista Competition takes place at Danes’ head office in Brookvale tomorrow. Six finalists will have three minutes to make two coffees – one espresso and one flat white.

“There’s a lot of pressure, making a good cup of coffee is a technical challenge,” head trainer Daniel Sussmann said.

An espresso is the hardest coffee to make. “There’s nowhere to hide with a poorly made espresso,” he said.

Amateur baristas had become skilled coffee makers, Mr Sussmann said. “We have been running the competition for six years and the standard gets better every year,” he said.

The competition was held on Saturday Oct 31st at 10am and was open to the public. Danes Specialist Coffee Institute is at 28 Dale St, Brookvale. Call 02 9938 4522.
